Pancake Day

A good excuse to post a blog that can fit into many of my categories!

Here is a really easy Pancake Recipe- with thanks to Delia Smith as it is a cross between her recipe and mine!

Pancake Mix – Ingredients

4oz plain flour

pinch of salt

2 eggs

7fl oz milk mixed with 3fl oz of water

2oz butter

Method

Sift flour and salt through a sieve into a large bowl – hold sieve high to get loads of air into mix!

Make a well in middle and break in the two eggs – whisk them into the flour mix. ( A fork would do just keep going !)

Add small amounts of the milk & water mix. Whisk it in and keep whisking until all liquid is included. Don’t worry about lumps just keep whisking and they will go!Make sure you include any flour from around the edges of the bowl. Whisk until smooth.  (A bit like a runny cream )

(If making batter ahead of time, I put my batter in its bowl in the fridge at this point and add the butter just when I am about to cook)

Melt the 2oz of butter in a pan then add 2 Table spoons of it to the batter and whisk it in. Pour the rest of the melted butter into a bowl and use it to grease the pan you will be cooking in. I find a wodge of kitchen roll wiped round the pan ( carefully of course!) after each pancake helps ensure an even coating of ‘grease’. It mops up excess too.!

A really hot pan is a must! So be careful!!!! Def. a bit forTHE GROWN UP TO DO IF MAKING THEM WITH THE KIDS!

When ready to cook turn down heat to medium and try a ‘test’pancake  if it works it is a perk for the Chef or those helping!If not you know to adjust heat, amount of batter used or oil etc.

I find a 7inch pan will probably need about a 2 or 3 tablespoons of mixture.  It is a personal thing some like thin some like thick – you decide! Try using a ladle to put the batter in the pan it all goes into together then! As soon as batter hits the pan pur it round the edge and side to side to get an even coating. Cook till you think it is done ( About a minute) flip it over( If feeling flash and confident flip it in air and catch in pan if not use a spatula!)Cook the other side.

Serve and enjoy with sugar and lemon juice! Yum Yum! Or of course whatever you fancy!

 Delia suggests stacking them between sheets of greaseproof on a plate over a bowl of water to keep them hot  - I say serve and eat!

Wet ‘ n ‘ Windy

No I am not referring to some personal health problem so it is safe to read on if your eating ! I just wanted to write a positive blog on the effect  the wet weather had on the time I spent with my children today. Having had a particularly frustrating morning work wise , with staffing issues yet again causing unnecessary grief, I was sort of dreading what to do with the kids after Nursery on a wet afternoon.  A challenge was set as I refused to give into the easy option of putting on the ‘electronic babyminder’ ( telly!) .

Much fun and laughter has been had by way of colouring, playing board games, doing puzzles and inventing new things to do with existing toys – I managed to get a friction car to do a complete circuit of the toy harbour much to the delight of my son! ( I guess you had to be there!)

But it got me thinking, I bet kids of yesteryear were indeed happier with simple good clean fun. Today we had no computer games and no telly which appears to have meant no whinging and no squabbling. I feel a valuable lesson has been learnt today. Spending time ( no matter how short) with your kids can pay dividends. I managed to do all that with them and still got my end of month figures for work done!  It appears to have worn them out more too – could this be because they have to use their brains today???

Now I love Summer – but here’s to more fun rainy days in with the kids – my craft stuff is at the ready !

Havant and Waterlooville do our league proud!

Today Havant and Waterlooville, a team from within the Blue Square South League, took on Liverpool in the FA Cup! Not bad for a team of non-professional footballers. Their Goalie is a building site Labourer for his ‘day job’! The final score of 5-2 to Liverpool does not do the  H & W  team justice as they played well and at one point they were 2 goals up!

It warmed my heart to hear that a few thousand supporters had made the journey to Anfield and to hear the Liverpool fans applaud the underdog team as they walked out on to the pitch. This is what sport should be all about. Great effort from everyone and no doubt a great atmosphere.! 

Well done also to  Eastbourne Borough, our team in the same league that we help sponsor, who won against Basingstoke 6-0!!!!!  Fantastic!

What the hell is wrong with people?

The past few years has seen a disturbing increase in the number of reports of men sticking up for something they believe in and getting killed or maimed as a result.   Just recently a young father was killed when he stood up to a group of youths causing a disturbance outside his home. Why? Because he dared to stand by his values and protect his family and home from a group of drunks.

What posses the youths involved to drink so much  (often of a brew affectionately nicknamed ‘Wife beater’) they decide it would be ok to get into a fight and end up taking another mans life? 

On New Years Eve I too was involved in some such incident. A group of teenagers had permission to hold a house party whilst their parents were out at a neighbours Party – it was New Years Eve and the parents in question believed it to be a calculated risk to agree to their daughters request for a party – after all they would be across the street from it – what harm could there be??

Unfortunately a small minority (as is so often the case) went to this party had too much booze and before we knew it a young girl came running into the party we had attended screaming that her sister was being beaten up by one of the drunk youths. To cut a long story short much pushing, shoving and shouting  went on whilst we ( the adults) tried to calm the situation which being alcohol fuelled had got a little out of hand. We had been having a lovely time until the poor hysterical girl had come over, we tried to sort the matter calmly.  Now some of the young lads, to their credit, sobered quickly and left after a little reasoning. However a certain individual just seemed to be out for  a fight – which he instigated and got. Now his opponent was backing away and trying to reason with and  got a punch in the mouth for his efforts.

After it had all settled down the injured party from our gathering had suffered a nasty bump to the back of his head and a split lip whilst trying to keep the peace in his little neighbourhood and assisting his friends whose daughter had been beaten.

What REALLY annoys me is that very few of those involved in that nights events and people who witnessed the injury are prepared to give  the Police statements. That includes the family who had the party where the trouble took place and whose daughter was alledgedly beaten up! The modern day view seems to be ‘ sorry mate I didn’t see anything’… The Officer that came to take my statement told me he had also attended another house party that night and that too had turned into a street fight – although this was between about 60 or more youths! Scary! He said there were only three Police Officers on duty that night! You do the math – how the hell are the Police supposed to do their thankless job? How frustrated they must be not to get the public support in the form of statements etc to be able to prosecute those who conduct in anti social  behaviour. He also told me that they had in excess of 14 Emergency calls about that other fight he had attented and no-one  will now help them get a conviction by agreeing to  make a statement.  How can these people cry for help and then not support the people who have risked their lives (potentially) to settle the disturbance.  Where is the sense of community that we as a nation used to have?

There are times when I am disgusted with my fellow humans and this is one of those moments.

“and then depression set in…..”

I can’t remember off the top of my head which comedy film this quote came ( Stripes? Scrooged or something..) from but it makes me giggle and it sums up how I felt yesterday. Not wishing to sound dramatic but sometimes life just seems to be a hamster wheel of hassle and we as humans are on the treadmill and can’t find the exit! Three year old had a paddy, 9 month old was teething( say no more!) the washing machine decided to throw its guts and water across the kitchen floor then my cars power steering decides to pack up! Great! So just when you think ok this year is going to be better than last, a sudden bombardment of poo makes you rethink!

Ho Hum ….just keep swimming, just keep swimming…… Smile and shrug it off or alternatively write a blog! Ok I feel like I have ranted and wittered on and so much better now……

Top Foody Tip – an alternative to cream for Trifles

Try whisking together a carton of ready made custard and a tub of marscapone cheese – looks horrendous to start with but comes together well and tastes yummy! So much so that my three year old has polished off two great big helpings of Mummy’s treasure trifle.

(why do we call it Treasure Trifle? Well because I threw in a couple of the chocolate coins left over from the Xmas stockings and they have partly sunk into the topping just like buried treasure!)

Cheesy Garlic Mash

Now being veggie I am always trying to find new ways to change dishes I like to cook as well as trying lots of new flavours.

My veggie Shepard’s pie is always a bit of a hit but I was getting bored with plain old mash potato. SO I grated up some strong mature cheddar and pressed a few cloves of garlic into the mashed loveliness and by jove what a find! You may well not be able to be within a hundred yards of another human depending on how much garlic you decide to put in – but hey yum yum! A finishing sprinkle of cheese as you pop it under the grill and sit back pour yourself a glass of vino collapso and you are good to go!

Top Tip – Emergency Loo Roll!

No I am not talking about popping a roll into the fridge before embarking on a curry fest !

Simply place one loo roll in your airing cupboard or other suitable place and then you will always have a spare and avoid that ‘oh no , no loo roll!’ dilemma. Just remember to replace it should you need to use the original emergency roll!

Child birth – was I just amazingly lucky?

As a young(ish) mum I inevitably meet other mums and quite often conversation will turn to pregnancy and birth.  Now I have always wanted to have children and I have always been in awe of the whole process of childbirth.  Mothers everywhere have such different birth experiences and so often it is the ‘horror’ stories that seem to be told. Even in the media the usual image portrayed is that of a screaming mother writhing in pain, whilst a cocktail of pain killers is administered. 

With this in mind it is no wonder that many pregnant ladies become fixated on the birth and before the due date have already made up their minds as to what pain killing techniques they are going to have.  Indeed some opt for a C section ( Cesarean Section)  – some refer to this as the ‘Sun Roof option – without a medical need for one.  I can’t help but wonder if some of this is down to the modern ‘too posh too push’ media fuelled  obsession for a celebrity lifestyle.  I have two children and I delivered both of them totally naturally without the need for any Gas and Air, Pethidine etc etc  I did have one baby that had turned to face the wrong way which was shall we say a little more uncomfortable than I would have liked but still manageable.   My husband is still amazed that I did not resort to bad language during either birth and often laughs at the fact that as my first born was ‘crowning ‘ I muttered “oo that hurts like hell”. 

I think I was very lucky and I do not want any other mums reading this blog to feel that I am having any sort of dig at those mums that for whatever reason go the route of pain killers etc. Also I am fully aware that certain circumstances arise whereby there is no choice but to go for other methods to help save the baby or the mother any unneccesary suffering.

I just wanted to let expectant mummies out there know that there are happy, healthy deliveries as well as the ‘media / dramatic ones’.  Also I would say try and do some research. A  little bit of preparation can go a long way into making the whole process an enjoyable one. Am I sounding like a Girl Guide yet with my Be Prepared advice!?

Personally our local hospital Ante Natal classes were a bit of a joke and I am so glad I  persuaded my hubby to come along to the NCT Classes with me the first time around.  We met other new parents to be, who had a lot of the same questions  and concerns that we had and this in itself was reassuring.  I am not suggesting we all rush out and start a hippy- ish, earth mother approach to birth and the NCT is not what I think many think it will be.  Our ‘teacher’ had had children by different delivery methods and could shed a little light on what to expect and could offer her experiences for discussion – which I found both interesting and useful in my preparation.

This lengthy blog must draw to a close shortly but before I sign off I would like to impart a few pointers that helped me.

1    Remember child birth is a ‘positive’  pain – look what you get at the end of it.

2   Think about the stages involved in the delivery process (contractions First stage, transition, delivery) this way you know what happens at each stage and by being informed about what to expect you are less scared by what is happening and can prepare yourself mentally for it.

3   Remember to listen to your body….

4  try and relax ( yeah I did just write that…)

5 learn about the body and how it physiologically changes – my NCT teacher described ‘crowning’ as imagining yourself trying to put on a really tight necked roll neck jumper -  it hurts but you get there in the end!   Basically your ligaments etc contract and relax and stretch and contract and relax etc until there is enough space to push the head through.

There are other little tips and things I would like to write about- including what  no-one tells you about afterwards and ideas for what you actually do need to take into hospital in your bag of stuff. Also I have a view point on inducing labour-  but I feel this is turning into a bit of an epic blog so will keep these subjects for another time.

Top Tip – Burn for longer

To make your candles last longer keep them in the freezer just before you are going to use them. They will then take longer to burn and save you money in not having to replace them so soon!
